Cinnamon + Sugar Cauliflower Gnocchi with Vanilla Icing

I think at this point, everyone and their mothers know about Trader Joe’s cauliflower gnocchi. After all it is amazingly tasty and super versatile. I’ve had it many, many ways — with pasta sauce, pesto + parmesan cheese, and simply with some olive oil and salt + pepper. However, I wanted to take it up a notch and do something less savory. So I decided to see if I could make a dessert out of it, and let me say, it did not disappoint! I initially just made the cinnamon sugar gnocchi but it felt like it was missing something.. so in came the vanilla icing!

Cinnamon + Sugar Cauli Gnocchi W/ Vanilla Frosting

Gluten free + Refined sugar free
  • Cook Time10 min

    Gnocchi:

    • 1 bag of Trader Joe's cauliflower gnocchi
    • 1 tsp 4th & Heart vanilla ghee
    • 1 tsp Lakanto's monofruit sweetener*
    • 1 tsp cinnamon

    Vanilla Icing:

    • 1/4 cup Lakanto's monkfruit powdered sugar sweetener*
    • 1 tbsp almond milk
    • 2 tsp melted coconut oil
    1

    Heat the ghee on the stove in a pan over medium heat. Pour bag of frozen gnocchi in pan and toss every few minutes. Once gnocchi starts to soften, add cinnamon + sugar and continue tossing until all is equally covered. Keep cooking until gnocchi is fully cooked and starts to slightly brown. Place pan aside and make icing (or you can start this while gnocchi is cooking.)

    For the icing, in a small bowl, mix ingredients together until icing forms. Dip gnocchi in icing to eat, in pour icing over gnocchi! I prefer the latter, or both (pour icing over gnocchi but leave a little to then dip said gnocchi in extra icing), but the choice is yours! 

    Don’t be afraid to run with the ingredients for the gnocchi and adjust them to your liking. I taste whatever i’m baking/cooking throughout the process and tweak it to my taste preferences. If I want more cinnamon, I add more. If I want more sugar, I add more. Etc, etc. 

    *You can of course use regular sugar and powdered sugar if you don’t have Lakanto’s, however it of course won’t be refined sugar-free. I haven’t tried this recipes with anything besides Lakanto’s however it shouldn’t change the taste much, may just be slightly sweeter!
