Super Soft Sugar Cookies [Gluten free + Refined Sugar Free + Vegan]

As the holidays were approaching I thought more and more about cookies. Okay, really I’m always thinking about cookies or some other type of dessert, but I was especially thinking about some soft + fluffy s u g a r  c o o k i e s.

I constantly see them at the grocery store as I slowly walk by the bakery section, but I’m always disappointed when I look at the ingredients – way more processed and refined than I want. Now don’t get me wrong, I still eat these types of cookies here and there, when I can’t help myself, but I was determined to create a sugar cookie with healthier ingredients without compromising the taste.

Well folks – here it is!! 

Soft sugar cookies that are gluten free and refined sugar free, and they can easily be made vegan by using dairy-free butter! 

Soft Sugar Cookies

[Gluten Free + Refined Sugar Free + Vegan]

    Ingredients:

    • 5 tbsp butter (use dairy-free for vegan option)
    • 1/3 cup monkfruit sugar or cane sugar
    • 3 tbsp unsweetened applesauce
    • 1 tsp vanilla extract
    • 1/2 tsp almond extract
    • dash of butter extract, optional
    • 1 1/2 cups gluten free oat flour
    • 1 tbsp cornstarch or tapioca flour
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • dash of salt

    Preheat oven to 350 and line baking sheet with parchment paper. In a standing mixer, or with hand mixer, cream together butter and sugar until fluffy. Add in applesauce, vanilla extract, almond extract and butter extract. In a separate bowl, whisk together dry ingredients. Add dry ingredients to wet mixture and stir until dough forms. Using cookie scooper, place dough on cookie sheet. Roll into smooth balls with hands, and then roll each ball into sugar to coat the balls before placing back on cookie sheet. Bake for 8-10 minutes or until edges start to get golden brown. Remove from oven and let cool down for a few minutes before moving to cooling rack. Enjoy!

    Why it has taken me this long to create this recipe I’ll never know, but I will be making them year round, not just around the holidays! I hope you enjoy them as much as I do!
