Pecan Pie Date Balls

Maybe it’s just me.. (highly doubt it) but there are numerous times throughout the day when I want a delicious snack. And usually that entails me wanting something sweet! 

These pecan pie balls are without a doubt one of my favorite snacks. It takes alll my willpower to not eat the entire batch. Seriously, they are perfect for a quick snack, pre-workout pick-me-up, post-workout, dessert, energy kick, etc. You can’t go wrong with these.

Plus, they’re no-bake and super easy to make with just a few simple ingredients.

Pecan Pie Date Balls

[gluten free + Vegan + Refined Sugar Free]

    Ingredients:

    • 2/3 cup pecans
    • 12-15 dates*
    • 1/2 cup oats
    • 2-3 tbsp almond milk
    • 1 tbsp cacao powder**
    • 1 scoop collagen, optional
    • 1/2 dark chocolate bar
    • 1 tsp coconut oil
    • sea salt

    Directions:

    Place oats in food processor and blend until a flour consistency forms. Next toss in pecans and pulse a few times to roughly chop them up. Then add in dates, cacao powder, collagen and almond milk and blend until ‘dough’ forms. I start with 2 tablespoons of almond milk and add an additional 1-2 tablespoon as needed if dough is not ‘wet’ enough. Roll into balls and place in freezer to firm up slightly while making chocolate coating.

    Place chocolate bar (or chocolate chips) and coconut oil in microwave for 30 second increments until melted. Remove balls from freezer and generously drizzle chocolate on top. Sprinkle sea salt and crushed pecan pieces over chocolate drizzle. Place back in freezer to harden. Store in airtight container in refrigerator for 3-4 days (if they last that long) or in the few for a couple months. Enjoy!!

    * I choose to soak my dates in hot water for a few minutes before adding to food processor. You can opt out of doing this, but I find it chops up easier if they are slightly softened by pre-soaking.

    ** Cacao powder is optional, but gives the balls a slightly chocolatey-er and richer taste. Try both ways to see which way you like better!
