Simple + Easy almond butter cups

You guysssss. These are possible the EASIEST sweet tooth kicker to ever graze this earth. Seriously, only 3 ingredients and they barely take any time to make. 

Now I can’t say that these literally taste like Reese’s cups because 1. they’re made with almond butter instead of peanut butter (although you could totally do PB instead!!), and 2. they are less sweet, BUT also a hellofalot healthier. 

If you’re into healthy dessert (well, even if you’re not) these are for you. 

Three simple ingredients that are needed: dark chocolate, coconut oil, almond butter. Depending on the percentage of dark chocolate used, you can add liquid stevia or other sweetener of choice to make the chocolate a bit more sweet. But completely optional!

The amazing thing about this recipe is that it’s soo simple to change. Don’t like dark chocolate? Use any chocolate that you’d like! Don’t like/can’t eat coconut? Try ghee (I haven’t tried this way yet though so no promises! Although ghee is fantastic so I’d be surprised if it didn’t end well). Prefer peanut butter over almond butter? Go for the PB! 

Seriously, you can really make these any way that you’d like.. I like to do it the healthiest, yet yummiest way for me. I also didn’t really measure out my ingredients, but I gave estimates below! Good luck and happy tastebuds!

3 ingredient almond butter cups

Vegan. refined sugar free. Dairy Free. Gluten Free.
  • Prep Time5 min
  • Cook Time10 min
  • Total Time15 min

    INGREDIENTS

    • almond butter
    • 1/2 cup dark chocolate
    • 1 tbsp coconut oil
    • liquid stevia, or other sweetener (optional)

    DIRECTIONS

    Get out mini muffin liners or chocolate molds.

    Melt dark chocolate and coconut oil together, either in microwave or on the stove over low heat. Add sweetener if you prefer sweeter chocolate.

    Fill bottom of liners/molds with a layer of melted chocolate, and then place in freezer for a few minutes to harden.

    Remove from freezer and put a small dabble of almond butter on top of chocolate layer.

    Cover almond butter with remaining melted chocolate and then place back in freezer until hardened.

    Enjoy!

    Store in airtight container in freezer or fridge!
